Author's Review
I, like many others I am sure, bought this after seeing some chef on FoodTV use it. It looked easy and painless, which is a very good thing when making homemade ice cream. This process has historically been tedious, noisy, very messy and all around painful.
The Cuisinart ICE-20 changed all that. I purchased this item new on eBay in an opened box, but a new machine for around $30 or so, plus shipping. I searched for them a few minutes ago and they are still retailing (even online) for about $49, so I think I got a great deal. I have had this machine for a little over a year.
You keep the bowl that the ice cream is frozen in, in the freezer all the time, so it stays cold and ready for your next frozen concoction - its always nice to have it ready in case you decide to whip up some homemade sweetness - fast!
It makes up to 1-1/2 quarts of ice cream, frozen yogurt, sorbet, or frozen drinks in about 20 minutes, at home, in your kitchen, and almost noiseless. After the freezing chamber has been in the freezer for at least eight hours, the liquid between its walls is thoroughly frozen - this is what replaces the old ice and salt method in your conventional ice cream freezer. The chamber then goes on top of the power base, then the paddle goes into the chamber, the clear lid/top is locked into place. Ingredients go into the chamber through an opening in the top as the paddle turns. The chamber chills the ingredients to whatever consistency you like. I have found that after chilling and mixing well, until the chamber is spent and no longer freezing, I take the chamber and its contents and put it in the regular freezer for a few minutes, to firm it up and make it easier to serve. Its still very fresh and homemade tasting, but firmer and not "ice cream soup" as my son calls it.
